Dante Moretti is the host of the Dante Moretti YouTube channel. Each week the channel takes one everyday Italian dish, finds the step most recipes get wrong, and shows the old way that works.
Pian Piano collects those dishes and many more: 110 recipes, written and tested in our kitchen, with metric and US measures and safe temperatures throughout. Photographs in the book are for illustration.
